Just had one a week or so ago. The DNR officer that hunts my woods saves the hearts when he takes out a deer. I put them in a cooking bag after cleaning them out well and pack them with chopped onions. I cook them in the oven until they are tender. I slice them and make sandwiches with slices of onions and pepper jack cheese on rye bread. When I came home from the farm a coupla hours ago The DNR officer was on his way back to the woods and said he had his eye on a huge doe and he would bring me the heart.
