If you want a MONEY PIT, go pick up an 806 or 856 that needs an engine overhaul or a TA. This is all stuff you have to pay the big bucks to have done by a professional mechanic because of the heavy assemblies and complex hydraulic systems.
By comparison a 560 is cheap to fix, and still small/simple enough that if you've done major work on an H or an M, you can handle the 560.
There's nothing any worse about a 560 that's survived this long as any other IH tractor like an M, 400, or 450. Odds are it has all the recall repairs, and if not, it was gently used through its life.
Only thing I have concerns on is the diesel engine. If it needs work it should be done by a professional or at least an advanced home/farm mechanic.
