Pretty much anything available today is going to be the Rockford style, so it's kind of a moot point. You could probably get by with replacing just the disc, but since all of the other components have to come out for access to the disc, you may as well get a complete clutch kit and be done.
None of the kits I've ever seen, installed, or sold had any kind of instructions. A shop manual will steer you in the right direction, but might still leave you with some questions if you have no experience.
