I never saw a "new" disc plow sold, but I know that a good farmer would coat any plow w/ plow coat after it was scoured from use, and before it was stored. Kept the share ready to scour quickly on the next use. All the plow coat I've ever seen was black. Not a real glossy black, but not flat black either. I'd use a semi gloss black to make it look like plow coat, and may even brush it on, as that was how plow coat was applied. Of course, if you thimk you're going to use it, then by all means, use plow coat! Plow coat is much softer than paint and comes off much easier, so which you use would be dictated by your plans for the plow.
