Without a doubt use the clutch plate on the left. You can expect problems with the one on the right. With that piece missing the clutch will be out of balance and chatter. The rest of the material could also fly off. In fact, looking at the non-broken side of the plate. it looks like it already was chattering. I would also put a small drop of oil or grease on the dampening springs. Not too much, you don't want it flying onto the disk/pressure plate. Also, I would suggest some grease on the trans input shaft. That rust will cause the spline to wear. You don't show the pressure plate, but it and the throw out bearing should be replaced as well. Standard procedure.
