There are other colors. Go to NAPA and ask for engine paint. Even that won't last forever on manifolds. I don't think the manifolds were painted with anything fancy so the paint just burned off. Technically that would make them red or rusty...not sure what you would call it.
You can just leave the flapper thing. It isn't going to over heat or anything. I would blast it or put it in the electrolysis tank and see if I could make it move. I just like a challenge.
