Any good Hyd oil or UTF will work just fine. As for live hyds lets think about it. Say you are running a loader off of them. Do you want to stop take it out of gear then let the clutch out to lift the bucket etc. Or say your using a mower ad you need to turn around to go the other way. Do you want to have to stop lift the thing and then go again. It is nice the have hyds that work with or with out the clutch out make it so you can do more on the fly or stopped
