There are two other options for removing the pilot bearing if you have access to a welder.
The first (and in my opinion best method or the two) is to find a nut with an outside diameter close to that of the inside diameter of the old pilot bearing. Install a bolt in the nut and weld the nut to the remains of the pilot bearing, be sure to clip the ground clamp to the bolt. To remove simply wind the bolt in and it'll push out the nut and pilot bearing.
The second (which will only work if you have only the outer race left) is to weld several beads (in short segments) on the bearing surface of the race and allow it to cool. This will shrink the race and allow it to be withdrawn easily. Your best bet is to clip the ground clamp to one of the bolts which holds the pressure plate to the flywheel.
