12 volt conversions generally start easier, especially in cold weather, or if the tractor is not in good tune. They're are safer to jump start if the battery goes flat. 12 volt batteries are more readily available (especially at discount auto places, Wallmart, etc) and are a bit cheaper than 6 volt. Can also "borrow" a 12 volt battery out of a car, boat, etc. in a pinch - can't do that with 6 volts. However, if you're a stickler for originality 6 volts is the way to stay. And there's something strangely satisfying about a slow-grinding 6 volt making several halting half cranks, then suddenly firing off on a cold morning. Everyone who's experienced it knows what I mean!
