I agree with you on the headgaskets, no sealer is necessary. By the way, some of the new "ultra" type sealants (I like the copper best due to it's heat resistance) do work very well in proper places. Just use correctly, a little is great, More is very bad. Finally, I've been a mechanic and fleet supervisor for over 25 years and find that those people who wrote the manuals and engineered these fine old pieces of equipment really did know what worked, it pays to follow their directions, don't try to reinvent a wheel that has worked for all these years.
