I agree with Red Dave - its a simple process to drop the oil pan and clean all the crud out. You then have a better idea what you're dealing with.
As for oil it depends on how many hours you're going to work it and change it. If you plan on changing it twice a year (fall and spring) I'd run any quality 10W30 in the winter and straight 30W in the summer. If you know its not going to get changed that often (very little use) I'd run Rotella 5W40 synthetic in it. Its not a true synthetic but it will resist sludging up when water condences in the oil pan with all the sitting.
