My 300 U has a simmilar arrangement. I always "assumed" mine was a straight 300 manifold. Sounds like yours was a modified Ute's. You could probably get by patching the existing hole and cutting another for a straight 300 manifold or start calling salvage yards. Sorry for the lack of good help on my part.
The upright exhaust was done on a lot of utes. Cornstalks don't like the underslung exhaust.
