I don't think evaporation is a problem in the winter, because of the colder tempatures. At least not in MN! I woudn't leave the cap off for many reasons, mainly posibility of dirt. if the cap is on you will only condense the water out of the air that's in the tank, if you leave the cap off you will have all the air in your shed!
