In reading your post, I am thinking that you have installed the clutch disk backwards. On some applications, the clutch disk will be marked flywheel side, to flyweel, so some such marking. If it is installed with that side towards the pressure plate, whatever springs, rivets, etc that pertrude will be against the flywheel and it will act exactly as you have described. This is especially so with clutches that have a spring loaded center for a smooth start up. Let us know what you find. Been there and done that.
