Sure you can. The only drawback I can think of might be that it could be a bit underpowered for any long distance trips if there are hills, and you might want to stay away from any interstate highways because you may not be able to maintain the minimum speed. Of course you could always swap in a larger engine, maybe even a diesel? My imagination is running away here, can you tell?
How about a short flatbed equipped with a hitch for a gooseneck? If you set it up right it could be a better rig than some of the one ton duallies.
