Those are darned good, but expensive batteries. I put one in my car last weekend. It says to never go above 15 volts for the 12 volt version - so your 7.5 volt maximum sounds about right. You really want to keep your charging voltage around 7 to 7.1 volts anyway. All batteries will last longer this way. You can adjust the third brush, as others have said, or you can look for a bigger resistor for your field winding. You can also look for a 6 volt alternator, which would be the perfect solution. Check out the Peukert Number on those spiral wound batteries. They have the lowest (best) number of any I"ve seen.
