The manifold gasket has no contact with coolant. Sounds like water may be from an outside source. Has it been really cold where you are condensation will show up quite fast sometimes? Was it sitting outside, if so is the valve cover breather in good shape with no rust pinholes, was the exhaust covered? Is the oil pan pushed up like mine was and not allowing it to drain completely. Just doesn't sound like an internal problem. My 2 cents.
