TAH never knew there to be but one of those drive plates should only need one. The screws are tapped just behind the threads so they tighten into the ears on the clutch and the tranny coupler ears. If the thick plate is to thick the screws will not tighten into the ears at the tapper and if the thin one is to thin the rubber washers will not tighten up. As for the plate lay it on a flat surface either side up, the two corners down need to bolt to the tranny and the two corners up need to bolt to the clutch shaft. If you go the other way the whole thing will be to short and the clutch shaft will not set in the pilst bearing in the flywheel.
