You probably will not need a pressure tank if all you want to do is keep a stock tank full. Work some play into the float switch so that it will not come on every time a cow drinks, but will allow a fluctuation of a few inches. Do not worry about the motor starting and stopping a lot. Mine has done that for 25 years on my pressurized system with no problems.
