The exhaust manifold will easily get hot enough to burn off non-heat resistant paint and it won't take much running time to do it. As a tractor restorer myself, I leave exhaust manifolds and exhaust pipes/mufflers unpainted. Orignally, the old tractors may or may not of been painted from factory. In either case, since they didn't have high temp paint, the manifolds probably appeared unpainted after some running time. They do however have high temp paint now that you can get and you may choose to paint yours with it. I, myself, like the no painting manifold idea. I sand blasted one and I keep it out of the rain. After several years, it has yet to turn a rust color.
