how hot should she go?

I got a b250 diesel that i just replaced the head on because the thing had cracked almost enough to split in two. To my surprise it's what i did not find that got me- there was no thermostat in sight, just an empty housing. My question is- what temperature thermostat should i get for that engine? Any help would be appreciated.
