A larger diameter cylinder will give you more lifting force. Force goes up with the square of the diameter. Going from a 2 inch to a 3 inch will more than double the force. Also you get the most force when the cylinder is extending. Less force when retracting because you have to subtract the area of piston lost due to the rod. Like Chum says, you're likely to start breaking things if the loader and tractor are not designed for the heavier loads.
