That's interesting. Different people's experiences are different. I've worked M's hard with no thermostat and without a fan shroud and never experienced overheating unless there was a shortage of water or the radiator was plugged (either internally or externally) or the water pump was not putting out enough flow. But I am a proponent of thermostats. Engines are prone to getting carboned up and running rough after prolonged usage without thermostats.
