I had always heard that if you butcher a boar pig the meat will smell "piggy" or wild but thought that was just an old wives tail. Well this time what the feeder thought was a ruptured pig was actually a boar pig that they missed one side when castrating. Now when I cook the meat it really smells piggy. Even the smoked bacon smells that way. What can I do to get rid of that smell when cooking? I've had some of the bacon, chops and neck bone which I boiled for soup and it all smells so bad you can't eat it. I'm thinking of cooking it up for the dog and cats but what a loss of the processing cost. However it costs me the same to buy pet food as this processing cost per pound so I guess it's a wash but still I wonder if there is anything I can do so I can eat it.
 
Hope others chime in but do you think soaking in salt water may help as we used to do with Wood Chucks ?
 
Most of the old boars are made into pepperoni, Italian sausage or spicy sausage for the pizza industry. The spices and flavors can hide the smell of the boar meat. As a kid when we penned the boars up their pen stunk so bad of that boar odor. Maybe you could grind it all up and mix in some flavors to mask the odor. Goodluck.
 
My Father way back used to put the wild pigs in a sty and feed them for 3 weeks to get rid of the "wild" taste.A barrow may have tasted better.
 
A fellow who raised pigs for many years fed his pigs potato waste.He butchered an old sow that did not breed back.He said that her meat cooking always smelled like potatoes.I have not raised pig for many years but would only buy female piglets.
 
That is boar smell. I know of nothing that will remove the smell. That is why old boars go into sausage. The spices cover up the boar smell.
 
20 years ago my FIL would buy boars at the sale barn, have them casterated by the vet at the barn and take them home and feed them til they healed up. Then they went to Jimmie Dean sausage. Don't really know if he made any money at it but he must have made a little. gobble
