Finished working the beef yesterday! Almost too big for us to handle! I am tired today. A different type of work than normal. Had good help with my two sons, wife, daughter in law and two grandsons 3 and 6 years old.

reminds me of Novembers past at my Grandpas, except no nice work area,just cold weather and picnic tables, worked hard all day and big Thanksgiving dinner, Mark
 
When I was in high school, I worked evenings and weekends for a neighbor who was a few years older than me, and decided if he was going to make it in the beef business, he needed to sell it cut and wrapped. It was pretty enjoyable work, as he was well set up.

He made a living at it for several years, then found out how much more he could make as a meatcutter for local supermarket, so that was the end of that.
 
This is just a home shop. I built it just so we would know it was our own meat. Have control over the conditions and do it when we wanted. Too many crooks out their.
 
Reminds me of my youth (LONG TIME AGO LOL) my dad had a meat market/butcher shop. We raised grain feed beef and hogs. My one brother ran the meat business along with dad when dad wasn't working the farms. So needless to say i was drafted to bone out meat and grind when not working the farm and lets just say if i had to make a living in the meat business i would starve. The whole building is 14'x20'. With a 6'x8' cooler and two upright freezers. I use them to help freeze the meat after butchering. You need to spread out the meat and not stack it so it will freeze faster.
