Did some more canning today and yesterday

Put up 7 pints of Jalapeno jelly yesterday and then did 5 pints of sweet Jalapeno slices today. Still have a lot of Tabasco peppers that I need to figure out what to do with and also a bunch of Salsa peppers to do something with. Also have a lot of green tomatoes that I may have to figure out what to do with but the matos are easy I'll just do some green salsa. Oh by the way if any of you happen to come up this way if you remember to ask I'll give you some of what I have canned
 
Old we did pear butter today 20 pts. on the stove. Two weeks ago did apple butter on a fire outside. Sounds like you will have something to eat this winter.
 
sure is good in a bowl of pinto beans though.

about all i ever used the tabaso peppers for is pepper sauce for putting on greens. just put the peppers in some vinegar.

I have dehydrated the tabasco peppers and ground them into powder.I use it to spice up the deer jerky

If you get up this way, please stop in and learn my wife about canning.
She'll usually learn from somebody else, but don't care much to pay attention to me. Can't say as I blame her, either. :)

First good year for the apple tree...dry as it was they really came on strong.
 
Ya I did a lot of spiced apple rings, apple sauce and apple butter earlier this summer. Still have a bunch of those apples but they are now horse feed. Thanks for reminding me that they where still in the fridge LOL
 
I'm self taught on canning. I just got a couple of books and read them. Both I got at Wal-Mart one is called (Even you can can) and the other is blue book of canning or something like that
 
If I ever get down your way, we're gonna have to open up a keg of those hot okra pickles. I talked to the local veg stand about getting okra to make my own, but he says he can't get decent okra- stuff is dried out, and either too small or over mature. Apparently the folks in the south have the good sense to keep the good stuff.
 
LOL well if my okra had grown this year I would have canned some more but for some reason it didn't do well. Maybe it was to wet again this year for it. Maybe next year it will do better. In the past I have had it grow so tall I could not reach the top of the plant to pick it and I can reach 8 foot. But hey if you ever get down this way stop in I'm sure I have something on the shelves you would enjoy. I did a few odd ones this year like an apple salsa apple rings Jalapeno jelly and a number of other things
