Yearling bull meat vs steered

Just curious if there would be any issues with the meat on a 11 month old 1100# grain fed bull vs same age/weight steer?
 
he's gonna be a little tougher than a steer...i had one butchered at about 15 months old last year...i had most of it turned into hamburger and chili meat...round,t-bones,strip are a little chewy but not bad...had the round tenderized...rib eyes are so tender you dont need a knife or teeth.
if you can,let him hang for a couple weeks to age...makes a big difference in flavor.
 
A beef organization did tests on this about 20 years ago. Might have bee "conseption to consumer" by charlay org. Followed the meat clear to the consumer. They found that consumers preferred the bull to the other..up until a certain age. I think it was about 11 months old.

We butcher young bulls from time to time instead of steers...nothing wrong as long as you butcher them young...we typically butcher between 800 to 1000 lbs...if they get much bigger the meat can start to get tough. Meat is good and seems a little leaner than a steer. The main advantage of the steer is you can feed them bigger without the meat getting tough, since they don't muscle up like a bull.

We've been eating young grain fed bulls for years. I think they're better than the steers, but have nothing to back up that claim, other than tender and tasty.
 
If he is young and virgin he won't be tough, the main reason to steer bulls is so the feed fed goes to grow hind quarters and loin and not to head, neck, fore quarters.
