My son and his pals started coming to the farm last year to make syrup. We've improved the system a bit this year, but it's still pretty primitive. Last Sunday we almost let the pan boil dry when the Canada/US hockey game went into overtime. A couple of these guys are professional photographers. Here are some pictures, if you want a look at Eastern Ontario in March.

In the picture with the guy carrying wood it looks like a lot of the wood in that pile is
ironwood (hop hornbean). If it is, you"re using just about the best wood there is.

Yup. It's ironwood cut four years ago. When I tried some green elm today, the boil slowed right down. The pan boils off a litre of sap per minute.
