I have to replace the gasket between the axle and the rearend housing. Can I just take the axle off or do I have to open up the platform? Also how much oil and what kind will I have to add back in.

Generally, for the gasket, a lot of folks just pull the axle housing far enough away to scrape both sides of the joint clean, then slit the new gasket at the top make sure the slit has a little gunk on it. No need to lift hte deck.

As far as capacity, if you're changing it out, full capacity is five gallons. It will take less if you have any sludge in it, The fill level plug is on the right rear of the tranny, directly above the arm that holds the drawbar up, hard by the axle housing and higher than the rearmost bolt on the axle housing. Fill to that level.
