Dave be glad u have such a dilemma. i grew up in central MN and miss the access to that. i am in SC now and there is only one meat locker in the whole state. yes i said state. and they only sell ground beef, chops and BBQ.

i dont have access to brats, sausage or sticks. so i only get to indulge when i go back for visits. damn i miss a real smoke house.
 
My grandparents used to send us summer sausage from Wisconsin. It was really good.

There is a polish meat market in Ennis that makes their own sausage. Its really good, but we have gone down there to get some in years.
 
I'm in the southern part of MN.

There is a little town of less than 1000 people, it has _two_ butcher shops. One is huge, bigger than the meat market in any super supermarket. The other is a respectable sized family operation. Both make good stuff.

Always thought it was funny that this little town drew enough people from the bigger towns around to have so much activity.

They are swamped during deer hunting season...

Where are you in SC? Here in the Murphy area there is a butcher shop(yes, butcher shop not meat market)that make great sausage. Come on over and fill up a cooler full. If you are close enough it's only a day trip . They are open till 7:pM on Saturdays also. Henry
 

I feel pretty fortunate. Have a nice meat locker right in town. Two miles from me. I bring in the critter live and pick up the packages when done.

When I was a kid, my best friend's dad was a butcher. He'd go to the farm, shoot whatever it was and take it home to process for the folks to pick up. I ate everything at that house except kidneys, testicals, pig feet, and eyeballs........ They'd send meat to the Amish for sausage, bacon, and salami/summer sausage. Here, every town has at least one bakery and meat shop. Every grocery store has a baker and meat cutter. And, if that's not enough, there are trucks that run and stop in outside towns 2 or 3 times a week. Everything you could possibly want......Except bacon (unless I get it in the commissary).

That is why I bought a smoker. I am working on building another. Actually looking building a full size smokehouse.

Found the plans on the LSU ag site that someone posted on here last week.

But a smoker doesn't help you too much without having a good butcher nearby or your own meat source. One option, maybe not that good, our Sams club here carries a pretty wide variety of meat. You would have to smoke it yourself though, or make sausages/brats yourself.

Here's a link ot the butcher shop we use. We're sending a steer over there next week or so to get butchered. They're meat sticks and summer sausage are awesome. Burgers are a little too lean though.
