I have a broken exhaust/intake manifold stud that I am getting removed. My question is whether or not to attempt to remove the other three studs and replace them or adhere to the adage that if it isnt broke dont fix it and leave them in place? Advice?

If theyre not stripped or loose, I wouldnt mess with them, just run a die over them to clean up the threads.
Remember to drain your coolant down a bit before you drill out the broken one- those studs thread directly into the water jacket.

P.S. Somebody will be along shortly to admonish you that a 1943 Ford is technically a 2N, so you didnt hear it from me!

I fully agree will with warbaby. Unless you are ..restoring.. the machine and every time you look at that side of the engine it would bother you to no end that the studs you left in there are ..not.. restored!

Remember to use brass nuts to reassemble and copper shield so you won't break another stud. joe

I have heard that left hand drill bits work well on broke bolts. Many times the bolt will come out without hurting the threads.
