In Wisconsin, we take fishing very seriously. Our lives depend on it. You doubt? By this time of winter, anything you put in a Wisconsin cast iron frying pan will come out tasting like fish. Not kidding.
 
I love the blackened catfish they have at Red Lobster. I can only imagine what fresh catfish would taste like. I guess they catch them out of the Minnesota river here but I doubt they eat them. This river is so polluted the water is thick like gravy.
 
the rest of country has no idea what a GOOD fish fry is most have never had Perch or Walleye other then some farm raised crap. and as for Catfish it is a trash fish bottom feeder we spent 4 winters in Florida and not one good fish fry Catfish yuk then Calver's opened up in Navarre FL.and had Walleye they could not keep it on hand
 
I am from just across the creek in MN. We too know what a good fish fry is. I am like most people and prefer to eat fish that came out of cold water. Around my area on a nice December day, half of the people are ice fishing. I keep all the fish of good size and eat them when caught while ice fishing but I never eat what I catch in summer. Besides, in winter you don't have to deal with the ticks, bugs and snakes. Just drive the pickup out on the ice and fish.
 
I live in south central Minnesota, my favorite is sunfish caught through the ice, fried in butter and seasoned with garlic salt. If you take off the scales first then fillet them it is the best.
 
Sturgeon? We have sturgeon in our part of Minnesota too! 64 inches long, about 50 pounds, too big to keep.

It's best when the catfish weigh under 1 1/2 pounds. The larger they get, the more fatty they get. 1 1/2 pound catfish or smaller just taste better.

I learned this from a man who owned a small local fish shack near Lake Livingston in Texas. His fish and hush puppies were so free of oils that you could run them through a press and get nothing. He said it's all about the temperature.

I was home on leave from the Air Force at the time and found out he was retired USAF. I had a beautiful photo I'd taken of the Taj Mahal on Randolph AFB when they had the Taj lit up in red, white and blue lights. Had a half-sized poster made of the photo and mailed it to him. Went back to the restaurant a few months after I got out (couple years later). His wife was trying to run the place, but he carried too many of his cooking secrets to his grave. I missed the funeral by less than a month. He had framed the poster and had it hanging on the wall. She said he talked about that poster every day until he passed.

One more thing - he caught ALL of his catfish fresh every morning.
 
In-laws bought a water front lake house on Livingston when they retired. Fr.-in-law used to laugh that his lake front lot was 65 ft wide and 5 miles
long....he bought before the lake started filling to get piers and bulkheads established and he was located on the soon to be widest part of the lake.
Every summer we took the kids and went down there for a week....great sport. The first few years fishing and the taste of the fish were super. Later on,
since the lake was on the Trinity River and that river serves Ft. Worth and then Dallas......not so much.

This was back in late 1960's and I was amazed at the surveyors of this 85,000 Acre water storage area who got the normal pool shoreline surveyed within
1 foot of actual. Very impressive especially since this was the E. Texas Piney Woods and timber was everywher and given the size of the project.
