A starter does not care which way it is hooked up it will still spin the same way. Now the coil on the other hand does care a little bit so it should be switched

Just for the record, permanent magnet starters WILL reverse direction if the "ground" is reversed.

NOT applicable if we are talking only about old tractors here, but a FACT, nonetheless.
 
Every old tractor Ive seen have wound electromagnetic field (NOT permanent magnet) starters, so NO switching polarity doesn't change direction...??.

No issue, those are series wound.

Some of the newer gear reduction starters are permanent magnet and do care about polarity.
