As you're in the DFW area and usually get some snow each winter, the grass needs to be cool-hardy. So next question is, how often will the air strip be used? Seasonal? Year-round? Will there be a lot of touch-and-go, or will there be minimal traffic on it?

For that area, and not knowing what all you have in mind, I would probably go with a variety of Bluegrass called Yukon. Here's a web page that tells more about this specific grass:

It would also help to know the amount of maintenance you have in mind for this strip. Will you be mowing regularly? What about water, or the lack thereof? Before planting anything, maybe a visit to a local expert would be beneficial for you. You could check out your local municipal airports, but they will have paved strips. So then you could speak with greens maintenance at local golf courses, or inquire at your local extension office.

I was worried there for a second, because you had Bluegrass in the message, but the link is for Bermuda grass which is correct for Texas.
I might further suggest that you contact your local extension agent for local recommendations AND have the soil tested and any amendments (lime, fertilizer etc.) put on before seeding.
Also do you need tile, grading, irrigation etc. done first. You want to do it right the first time.
Fall really is the best time to plant grass seed, but you might be a month or two later in Texas. Here in Ohio we recommend late August to late October as the window for seeding.
