Larry, store bought chickens go from hatchling to slaughter very fast, I think that is why they don't have much taste, I also prefer older yard birds, even for frying. In my opinion you can't beat aged on the hoof beef either, we never slaughter a steer for our own use under 30 months old, let em graze a couple years then fatten on corn.

Several years ago I was told about a chicken auction so I had to go and see it. My wife and I stood there watching and a guy bought a really big rooster. He had it under his arm and was standing by us. My wife asked him if he was going to name it. He said I already have it is supper

I remember that old girl, is she still with us? I never had much luck with old birds but the ones we raise here and slaughter at 8 weeks are fantastic. Haven't done it in a couple years due to time issues but would like to do it again soon.
