Funny how the loin is usually around $2 a pound and bacon is over $4 a pound most places.

Years ago bacon was lower cost than the loin.

Farmers are going to have to develop a hog with more bacon.

They got the loin larger on each hog over the last 30 years.

Why not the bacon?

Gary, I'll bet that's the direct result of fewer people actually cooking any more. Making a good pork chop dinner is above the abilities of many young folks out there- they don't get past pizza and hamburgers.
 
Invention of ready to eat, fully cooked bacon probably fueling sales of bacon in grocery stores. It is already cooked so no cooking time is needed. It is little more expensive than uncooked but many working folks will pay more for it since saves meal prep time. It is good if you have not tried some, especially extra thick cut. Strong demand for bacon in future because of this unless exports tank for unknown reasons.
 
Larry your post about meat prices reminds me of a aunt I had she passed away 15 years ago.....My family was dirt poor during the depression I have heard stories of how they almost starved during the depression ...... after the depression they all did very well...this one aunt did Very Very well and had a huge heart..... For the 4th of July Decatur Alabama has a Spirit of America Festival with a huge fireworks show ...her house sat just far enough from the park the fireworks show was better viewed from her back yard than the Park.....any way she always had all the family over for a huge cook out a 100 or more people for the 4th of July and she would shop for months before for what she could find on sale she never bought anything unless it was on sale she loved pork chops and I do too no telling how many hundreds of pounds I cooked in her back yard.....anyway your post brought back a good memory
 
Another reason for bacon shortages/high prices is the fast food places offer bacon on most everything.
 
I just got boneless Select rib steaks (rib eye plus surrounding medium, erroneously referred to as "Rib Eyes") for 5 bucks/# - a penny.
 
Had Pork chops last night Mom said growing up she never seen a pork chop about the hole hog went into sausage. Growing up the only time I seen a pork chop was at my grandpas birthday, a aunt would bring baked chops. Yum Yum but I would have to wait a year to get more of'em.
