Pickled eggs

I remember seeing them as a kid in the bar,
but it never appealed to me. About a year
ago a friend of mine made some hot pickled
quail eggs. I tried one and was suprised to
find I liked them :). So tonight we had a
dozen puller eggs that I decided to try a
recipe from the internet on. 3 jalape?o, E
habanero, red pepper, onion, cinnamon,
sugar, other stuff. I was simmering it on
the stove and cracked the lid to stir it.
The steam came up and I took a whiff. It
really smelled incredibly good after I put
out the fire on my nose hairs lol. I'm
really looking forward to this and hope my
expectations aren't too high.
 
The first 3 items on your list turn me off, Will not touch that stuff. I just use the juice from pickled red beats and when eating a bit of Miracle whip and bit of black pepper and salt. It seems like every recipie I see that to start sounds good till you get to reading it and there is always at least one item that you would never put in your mouth.
 
I just make a dozen eggs, peal, and add a jar of pickled beets that come in a jar. Put them in a one quart zip lock bag and seal. Let them sit in the fridge a night and then enjoy. I just made a batch last night.

Yep, there's things you might never think of. Visited older son at engineering school last Sunday, wanted to take him out to eat. He was tired of pizza, the steak place was closed, he suggested Thai to the old man, I said yes. I followed his suggestion, got the Pad Thai with noodles, peanuts, all sorts of weird-ness, and man was it delicious, He got some sort of weird THai tea, and I should have too, I sipped it, it was delicious.
 
Okayeeeeee. What about the gallon jar of them you see sitting on a counter in a retail establishment of some sort? Comments encouraged as I never ate one and figured they were long past rotten. Do I have an ill conceived notion?
 
That's what I did a couple months ago, and they were awful good too. I have a hard time eating a whole large pickled eggs all at once, better luck with smaller ones.
 
The whole point of the pickling process is to preserve the food without refrigeration. Anything you pickle will last a long long time if kept submerged in the pickling juice.

The high salt content in the pickling juice among other things kills existing bacteria and prevents new bacteria from growing. It's just not very healthy due to the high sodium content.
 
Just made four dozen pickled eggs a week ago. Used a new recipe vinegar water pickle spice cinnamon tumeric hot yellow peppers. Its very good not hot enough for me so I added some jalapeno relish now it hits the spot.
 
I had a friend that would get the seconds at an egg farm an would make pickled eggs every week. and would make up a new receipt each week. The two main ingredients are vinegar and water then what every you think sounds good you add.
One batch she made had some spices onions and habaneros. she brought it to a boil and the oils from the peppers flouted to the top. When you pulled an egg out of the jar it would get coated with the pepper oil, then the oil would get on your lips
You can guest what happened. But they were some of the best pickled eggs I ate. They also got you gaseous very fast.
Draft beer and pickled egg are the best.
