Getting potatoes to sprout

While we are on the subject or potatoes here lately, I remember reading in one of my old almanac books not to store potatoes next to something because it causes them to sprout but I can not remember what it was. I would like to know because I want to do two plantings of potatoes this year but around here most places have already sold out of seed potatoes so my only option is to keep some after I dig them up and try to get them to sprout. I know they will eventually but anybody have any tips on getting them to sprout faster? Thank you for your help.
 
Stopping them from sprouting is more of a concern here. I have a bunch in the basement from last year. Still good to eat but sprouting badly.
I have de sprouted them about a month or so ago and they are sprouting again. I'll plant a few more of them before the month is over and have
no doubt they will grow fine.
 
Keeping potatoes near onions will make them sprout prematurely. Both the onions and the potatoes make each other sprout. How quickly is another matter. I have always found that for longer storage, keep the onions and potatoes away from each other.
