Calling all meteorologists, climatologists and other 'ologists. Can you 'splain me why, in this month of January, the length of the day increases 27 minutes in the evening but only 8 minutes in the morning? Seems to me it ought to be about even.

Seems like it has something to do with elliptical orbit doesn't it? The earliest sunset actually occurs around December 6th or so. The days get shorter after that because of later sunrises.

Because the Sun isn't at its highest point in the sky when your clock says 12:00 (noon local time). The difference is the error of your clock compared to "Local Solar Noon".

Local Solar Noon is when the time when the Sun is highest, the time on your clock when that occurs varies by season because the Earth's poles are tilted, the orbit around the Sun isn't perfectly circular, and you need to consider both the Earth's rotation on its axis and its orbit around the Sun.

That would change due to your location if you are as the estern edge of your time zone or western edge. East side you would be dark already while west side would still have daylight.
