Red eye gravy

Just read the post about sausage gravy, speaking of gravy, does anyone know how to make red eye gravy? My Mom made it with thick country cream, flour, and grease from fried country ham, don't remember anymore other than it was delicious poured over biscuits.
 
X-Y switch- 'Red eye gravy' is made with coffee. Since I don't drink Coffee. I don't like it.;

I would much prefer sausage gravy and biscuits! Yum!

appearance. Prepared traditionally, with coffee and grease combined in the final step".

d beatty- The way we made true "Red-Eye Gravy" was...You take the ham bone that was salt cured and sliced about 1/4" thick. Fry the bones until the 'marrow' 'melted' and then removed the bones, Add flour to make a rue, then coffee and some milk and stiffen until you get to desired thickness.

I was raised on southern red eye gravy. I never made it myself and I know that it had coffee in it but it never had milk or flour. It was basically what was left after frying ham in an iron skillet with a little coffee added and cooked down. What we had was pretty thin. It may have been because we were so poor, heck after watering down the soup for 3 days it got a little runny too :lol:
 
X Y Switch - Interesting handle. Anything to do with the phone business, like as in a Stromberg Carlson stepper?

ou would probably like it made the same as the video, except with water in place of the coffee.........the way our folks made it.
 
Wondered if someone figure that out, you got it. Spent 43 years in the switch rooms, Stromberg steppers were my favorite but Nortel's DMS switches made them so obsolete. We probably have something in common, lol. My email is [email protected].
