It's been a great year for my peppers and son was complaining about having to dig through so many bags of frozen peppers to get what he wants, I started making Chili.
Time to start emptying the freezer of this years chili.
Browned 25+ pounds of hamburger, caramelized 5 pounds of onions, added 12 quarts tomatoes and 4 quarts of tomato sauce, 20 ounce jug of chili powder and a bunch of other spices. Then I got to add the peppers, Pablano, Sweet bell, Sweet Dulcetta. Crushed Red pepper (No Habernaro, those things burn me up! I just dehydrated and crushed them).
Now, started canning the Chili. First 7 quarts are to come off in about 10 minutes (90 minutes @ 10 PSI). Looks like 3 more canning cycles to go after this one comes off. Gonna be a long night!
Looking to be about 26 to 30 quarts of Chili.
Start again in the morning with the same amount of hamburger, only this time making Spaghetti sauce. Looking to get about the same amout of quarts for that round of canning also.
