Do not know if you heard this bad news Jerry.

Heard about it on the radio today.
Seams the feds have set the prevailing wage for legal immigrants that work in the crawfish industry at $12.35 per hour.
That's $5 over U.S. minimum wage.
Growers are saying that equates to $3.00 a pound.

While it has been appealed the news is saying expect to pay $3 a pound more for crawfish this year than you did last year if it not overturned.

I really do not understand how or why legal immigrants would work under a prevailing wage when U.S. workers work on regular minimum wage but it seams that is the rules they work under.

Thanks for the bulletin, John. I had heard something like this was coming. It's incredible how government can screw up a commercial endeavor as basic, as elementary, as traditional, as crawfish? After all, this is a product that goes directly from the pond to the pot to the plate, all within a few hours. I suppose this ruling will affect mostly those workers who peel the tails for restaurants. Etoufee will be unaffordable.
