Well I decided to go ahead and buy the conversion kit; from 6 volts to 12 volts! But my question is; do I still use the voltage regulator, or will that be explained in the kit? Thanks Gene!

If the kit is a typical one that comes with a Delco 10-SI alternator then you wont need a VReg any more as those alternators are internally regulated.
