OT - Mushroom farm

A picture of my son's mushroom crop. It's a continuous harvest, the most recent being 7 & 1/2 gallons. He brought a couple of sacks over this evening, and we sautéed them up to smother a couple of T-bones. Stove picture is at the beginning - end result was browned, but I didn't think to get a pic. Too hungry. Now I'm ready for a nap.

What kind of shroom are those?? The picture makes it look easy, but I'll bet it isn't. Is there a certain wood that you have to use, and I suppose there is a moisture requirement that has to be met. Probably a lot to know, to be successful?
 
I found a patch of too-far-gone chantrelles yesterday while running dogs. Have to remember to check that spot nest year.

Ralph - I think the proper name is Shiitake mushrooms. They are growing on oak logs that were cut live. You can see the "plugs" on the sides of the logs. There is a set-up involved, and a procedure to be followed. In real dry seasons, I understand that you need to occasionally soak the logs to restart them. This was not a dry season. I think it would be considered "easy" - it's like another type of garden, you could say. Some folks think a garden is too hard, but most of us think it's easy and fun, if you know what I mean.
