I continue to read/hear about second generation hybrids not producing the same quality of produce
If I find a nice bell pepper in the store, I'll save the seeds to plant next year. They grow great and produce the same size and quality.

My question is- Why do they say you can't get the same quality from second gen hybrids?

A true hybrid is from two different parents/lines. When you replant a hybrid you do not have all of the genes from both parents/lines. You can get almost all of them or maybe not many at all. It depends on the exact genes in the hybrid you saved.

Your lucky. Most stuff I find in stores have been X-Rayed so the seed will not grow

How do you know those peppers are hybrids rather than varietals? For reference, Burpee Seed offers 18 different bell pepper seeds, of which only eight are hybrids.
