Just started experimenting with an All American 921 canner. Manual states that you can do 7 quart jars at a time. With only one layer, it can hold 8 jars, and with 2 layers, it can easily hold another 5. Is it unsafe to do 13 at a time, or even 8 at a time. Is there an issue with water depth in doing 2 layers at once(pressure canning, not BWB)
 

Given what you are dealing with.....I would say to follow the directions since some engineer type spent the time to design the thing and write instructions.

I think the stacking feature is only for pint jars
 
Are you sure you got Model 921? The Model 930 will was designed to hold 14 quarts. Make sure of your model # and then read specs for that model. If you try to over-load a canner... many bad things can happen which, usually results in bodily injury or death. Please follow manufacturers specs when canning, not only for your safety but, for your family's.

Go with 7, you need space around the jars for the heat to get at them properly. If they are too close together, the heat cant get at the jars and they dont heat up quick enough, which throws off the recipe times.

Putting a second layer of quarts will put the tops of the jars too close to the top of the canner. Too close to the top means the jars could be in that cooler pocket of air and they wont get hot enough. They talk about it in the manual and venting the canner till just steam comes out.

No issue with water depth, just stick to the recommended jar load and dont boil it dry. If you preheat the water in the canner while to get jars ready then the water level can drop if something takes too long.

In my experience only 18 pints seem to fit. It is still way faster and probably safer to use this over the old water bath for corn & beans
