I am putting a new head gasket on my '52 8n...which type is best, soft or all metal? what are the pros and cons of each type?

Either will work.
Sealing the head on that low-compression antique tractor is NOT rocket surgery.
If using the laminated metal type, I would spray each side with CopperCoat, according to directions on the can.
My favorite would be a FelPro composite gasket, though.
Make sure both surfaces are CLEAN and free of debris and that ALL bolt holes in the block are clean and there's no debris in the bottom of any of them.
