More canning. Carrot cake Jam

If the stuff sets up that is. Seems I have a problem when I try to double a recipe or maybe the pectin is not as it should be but been making a lot of syrup. Did 7 pints in the water bath and 3 right to the fridge
 
The reason I double most if they call for doing maybe 3 pints which is a waste of time and the power so I try to double but then some time that ends up being almost triple

You spent too much time breathing red lead fumes while you was on the deck force. Carrot cake jam???
 
Hey some one saw the recipe and asked me to make it so I did. Carrots pears pineapple Cinnamon cloves lemon juice sugar and pectin. When cooking smelled like carrot cake
 
Old, I've never heard of it, but the ingredients sound good! I learned a long time ago, as long as you know what's in a dish, even though it may seem a bit unusual, if you don't try it, you might miss out on some good eatin'!
 
Forgot the also say nutmeg. Things like this is why I collect cook books and canning books and pickling books. I have over 1000 recipes just for canning and pickling
 
Big problem I find is many recipes call for say X number of cups but once you get there it seems it takes more or lass lbs then called for to get that. Then things like if it is a rainy day could into play etc.
