lean ground beef price??

What are you guys charging for lean cow beef? 7 year old thinner but not skinny cow. Should be about 90% lean or so according to the butcher. We normally charge $4 for a 1&1/3 pound package of ground beef from a yearling butcher steer. Wife says lean beef in the store is upper close to $4 if not more per pound, and 73% lean ( ick) is upper $2"s
 
From what I just saw on the news,if it's from the stem cells of an organic cow,about $300,000 a pound.
 
You sir have what is called a by product of the beef industry, cutter or a canner. Not worth what a yearling fed steer or heifer would be.
 
Around here they call it 'extra lean' ground beef. They grind it 2-3 times and charge more for it than regular ground beef.
You can be assured it doesn't end up in a can.

Local butcher here has "ground round" on "sale" for $3.99/lb. Thats the leanest we get around here. I'm not sure on the actual percentage of fat.
 
Where'd ya think the old dairy cows go? Price of them goes up here every spring when burger season starts...

Im not gonna deny where it goes, there is nothing wrong with it but Im not going to eat it. Im glad it is used, it makes beef more affordable, I would never try to sell it as a product that is equall to choice or select beef just because it is lean. Lots of differance in quality. Like I said, eat it all up more high quality beef for me.
 
Wife wanted to try "Wendys" for lunch. I got a
quarter pounder. Grease was just dripping out of
it as I held it,(OK squeezed it) to eat it. It
hardened on the box, like lard. I would judge it
to be 40% fat, 60% meat !
 
There's nothing wrong with the quality of cow beef if it's ground into burger. We've eaten a lot of it here that wasn't ground too. That's more hit and miss... but the rib and loin cuts are generally better. Rounds... not so much. But as burger... it's all fine. There's a LOT of it that isn't ground up too if you only knew the difference.
