OT Big Time---A Salad Mom used to make

Many years ago, My mom occasionally made a salad that we kids loved.
From memory it was made up of Lettuce-Green Onions with blades-Mustard Greens-Radishes- all chopped up with Hot Bacon Grease poured over it. We always had cornbread to go with it.
Do any of you remember--or eat it now?
If so, what was it called?
I think Mom used to call it "Grease Salad".
 
I never asked mom who came up with it but was pretty sure it wasn't her own.
Over the years, I have asked many people and no one had heard of it.
I knew you guys wouldn't let me down, so I asked.

Mom use to just call it wilted lettuce. She would pour bacon grease over just leaf lettuce, nothing else. That is about the only way Dad would eat lettuce. However I didn't really care for it.
 
The hot grease needs some sugar and vinegar in it. Sometimes sliced boiled eggs can be added after the salad is mixed together, then it is called popeye salad.
 
Ex used to make it # strips of cooked bacon greens sugar and vinegar with a little water. Always looked forward to it in the springtime when the new lettice came in. added green onions and radishes too

My wife makes a dressing for spring garden lettuce"grandmas receipe" that I just love, bacon grease,flour sugar, vinegar, water some salt,egg,milk and cooks a gravy like thickness. My "survived the winter" meal is fried country ham , wilter lettuce, and fried potatoes. get out of the way of flying elbows and forks. Grandad used to gather a green "weed" in the spring he called groundhog lettuce but the deer have wiped it out.It was better than dandelion.
 
we called it wilted lettuce, we made it with buttermilk, tbls of bacon grease, onion....heat the buttermilk till it starts to boil, add the bacon grease and pour over the lettuce and onion and stir,..dad would squeeze it with his hands, but was to hot for me to do that....
 
If you only use a little bacon grease, it is good. I do green onion that way and have also done dandelion greens.

Will have to try it with lettuce and radish greens added to the mix.

We called it wilted lettuce salad as well, but ours was more than just grease. I don't have a full recipe and its been years since I made it, grandma never measured and I followed suit but I'll try.

cook bacon, drain all but about a tablespoon of grease out. pour in equal amounts vinegar and suger, depending on how much you want to make, but IIRC roughly 4 tablespoons of each for a fair sized salad was ok, you don't need a huge amount of dressing. Then a pinch of salt. mix over heat and pour over the salad and mix. you want the mix to be warm, but not boiling, just enough to wilt the lettuce a little. I have also cooked some onion in the bacon grease before adding the vinegar. You may need to adjust the ratios or even dilute it a little. we liked ours on the strong side.

The same basic mix does very well over green beans
2 cans green beans (drained)
about a tablespoon of bacon grease
7 tablespoons vinegar
7 tablespoons suger
pinch of salt depending on the saltiness of the beans
onion flakes or a bit of onion

That is how dad and I like it, but its a little strong for a lot of people so for "public consumption" we'll dilute it down with the reserve of one of the cans of beans liquid.
 
We always called it killed lettuce. My grandmother made it all
the time. My family loved it but I never was crazy about it and
still ain't. I always told them I didn't like eating greasy
lettuce...lol
 
Mama made it when we were growing up. Was just lettuce, onions and chopped hard boiled eggs with bacon grease over it. My wife and I still eat it. We call it raw greens.
 
Mom used dandoline for "greens" oil, vinegar, and
bacon grease. We all loved it.
I can still remember,in the spring, people used to
come by the "carloads" from Canton Oh., about 5-7
miles to pick all of the dandoline. Now, every place
you iook its dandolnes blooming
 
Yes, as many others have said, it's called wilted lettuce. It's one of my favorites. I think Paul Searls gave a great recipe for the salad. I want to try it with green beans, sounds good Paul.
One thing to keep in mind when preparing wilted lettuce, use leaf lettuce and not head lettuce.
For those who thought it was too greasy, try using a smaller amount of the prepared dressing.
You can't buy dressing as good as this is, and since it's homemade you know what's in it.
When I make it I use 8 or 10 strips of bacon, fry them crisp, then break up the bacon into the salad. After the dressing is made I put it in the refrigerator, then heat it up in the microwave for several days to follow. Seems to keep well in the refrigerator for several days, or until it's gone.
For me it's the #1 leaf lettuce dressing.
